
Black and Blue Bars

Ingredients:
Blackberry Jam
12 oz fresh blackberry
3 tbsp sugar
2 tbsp water
2 tsp cornstarch, mixed with 2 tsp water
Black and blue bars
1 cup flour
1/4 cup powder sugar
1/2 tsp cinnamon
1 stick butter, cubed
1 tsp vanilla extract
6 oz fresh blueberries
Oat crumble
1/4 cup flour
1/4 cup oats
2 tbsp brown sugar
1/2 tsp cinnamon
1/8 tsp nutmeg
2 tbsp cold butter
Steps:
Blackberry Jam
In a medium saucepan add the blackberries, sugar, and water. Let cook until the blackberries have broken down.
Bring the mixture to a boil.
Mix together the cornstarch and water, then add the mixture to the blackberries and cook until thickened.
Allow the jam to cool.
Oat crumble
In a small bowl, mix together the flour, oats, cinnamon, nutmet, brown sugar.
Cut in the butter and mix together until all combined in a crumb mixture.
Set aside while you work on the bars.
Black and Blue Bars
Preheat the oven to 350.
In a medium bowl, mix together the flour, powdered sugar and cinnamon.
Using a pastry cutter, mix in the butter and vanilla until the mixture is a crumbly, sand like mix.
Pour the crust mix into the bottom of a 9x9 pan. Use the bottom of a measuring cup to press the crust into the bottom of the pan.
Bake the crust for 10-15 minutes, until it is just starting to brown.
While the crust is baking, mix the fresh blueberries into a bowl with the cooled blackberry jam.
After the crust is done, remove from the oven and add the blueberry and jam mixture, spreading across the crust.
Sprinkle the oat crumble on top of the jam and bake for 25-35 minutes, or until the fruit is bubbly and topping is golden.
Allow to cool before slicing and enjoy!
