Pumpkin Pie Cookies

Ingredients:

Pumpkin filling

  • 2 oz cream cheese, softened

  • 1/2 C pumpkin

  • 1/2 tsp pumpkin pie spice

  • 1 tbsp flour

  • 1 tbsp brown sugar

Cookie base

  • 1 stick butter, softened

  • 1/4 c brown sugar

  • 1 tsp vanilla extract

  • 1 egg

  • 1/2 tsp baking soda

  • 1 C flour


Steps:

  1. Preheat the oven to 350

  2. In a small bowl, mix together all the pumpkin filling ingredients until well combined and set aside.

  3. In a large bowl, cream together the butter and brown sugar.

  4. Once mixed, add in the vanilla and egg and mix until fully incorporated.

  5. Add in the baking soda and flour, and mix until it forms a dough.

  6. Scoop the dough, about 1/2-1 tbsp per cookie, roll, and place on a cookie sheet to bake.

  7. Bake the cookies for 5 minutes then remove from the oven.

  8. Using the back of the measuring spoon, I used a tablespoon, dent the middles of the cookies to create a well.

  9. Fill the cookies wihh the pumpkin pie mixture, about 1-1.5 tbsp per cookie.

  10. Return to the oven and bake an additional 5-7 minutes or until the cookie is golden and the filling is set.

  11. Remove from the oven and allow to cool.

  12. Optional: once cooled, dust the cookies with powdered sugar and cinnamon!
