Spiced Pear Upside Down Cake

Ingredients:

  • 2 fresh pears

  • 3/4 c butter, divided

  • 1/2 brown sugar

  • 1/2 tsp cinnamon

  • 1/4 tsp ground ginger

  • 3/4 c granulated sugar

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 1/2 C flour

  • 1 1/2 tsp baking powder

  • 1/2 C whole milk



Steps:

  1. Preheat oven to 350.

  2. In a bowl add 1/2 cup softened butter and mix with the granulated sugar until well combined and fluffy.

  3. Add the eggs one at a time until fully mixed in.

  4. Stir in the vanilla extract.

  5. Add in half the flour then mix, then add in the milk and mix again.

  6. Add in the remaining flour and baking powder and mix until just combined, then set aside.

  7. In a small saucepan, melt 1/4 cup of butter. Once melted, add in 1/2 cup brown sugar, cinnamon, and ground ginger and mix.

  8. Pour the brown sugar sauce in the bottom of a 9x9 pan and top with sliced pears.

  9. Pour the cake batter on top of the pears and bake for 30-40 minutes or until a toothpick inserted comes out clean.

  10. Remove from the oven and allow to cool 10-15 minutes, then flip it out of the pan.

  11. Allow to cool before slicing, then enjoy!
