
Pumpkin Cheesecake Blondies

Ingredients:
1 stick butter, melted
1 C brown sugar
1 tsp vanilla extract
2 eggs
1/2 C pumpkin puree
1 tsp pumpkin pie spice
1/2 tsp baking powder
1 C flour
4 oz cream cheese, softened
1/2 tsp vanilla bean paste or vanilla extract
2 tbsp sugar
1 tbsp flour
Steps:
Preheat oven to 350.
Melt the butter in a small sauce pan then add to a medium mixing bowl.
Add the brown sugar to the melted butter and mix until combined.
Once mixed, add in the vanilla, pumpkin, and eggs and mix until fully incorporated.
Add the pumpkin pie spice, baking powder, and flour and mix until combined.
Pour the pumpkin batter into a 9x9 baking pan into an even layer.
In a small bowl, combine the cream cheese, vanilla, sugar, and flour until well mixed.
Spoon the cheesecake mixture in small dollops on top of the pumpkin batter. Take a knife and swirl the cheesecake mixture throughout the pumpkin.
Bake at 350 for 25-30 minutes or until a toothpick inserted comes out clean.
Allow to fully cool, then slice.
