Ingredients:
1 stick salted butter, melted
1/2 C brown sugar
1/2 C granulated sugar
1/2 tbsp instant espresso, optional
1 tsp vanilla extract
2 whole eggs, 1 egg yolk
2 oz melted semi sweet chocolate
3/4 c flour
1/4 c cocoa
1/2 tsp baking soda
1 can dulce de leche
Steps:
Preheat oven to 350 and line a 9x9 pan with parchment.
In a large bowl, add the melted butter and both sugars. Mix until blended together.
In a small bowl, dissolve the espresso powder into the vanilla extract, then add to the sugar and butter mixture, along with the eggs and egg yolk. Mix until incorporated.
Pour in the melted chocolate and mix until well incorporated.
Add in the dry ingredients, flour, cocoa, and baking soda. Mix until just combined.
Pour the brownie batter into the pan. Then, take dollops of the dulce and place all over the top of the brownie mix, I used about 5 tbsp.
Take a knife and swirl the dulce de leche in with the brownie batter.
Bake for 25-35 minutes, or until the brownies are set.
Once the brownies are done, allow to fully cool, then drizzle with additional dulce de leche. To make it easier to drizzle, I added a splash of heavy cream to the dulce and warmed it up before drizzling!
Slice and enjoy!
