
Blueberry Oatmeal Cream Pies

Ingredients:
Oatmeal cookies
1 stick butter
1/4 cup white sugar
1/4 cup packed brown sugar
1 egg
1 tsp vanilla extract
1 cup flour
1/2 cup oats
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
Blueberry compote
1 cup frozen blueberries
2 tbsp water
1 tsp corn starch
Blueberry frosting
1 stick butter, softened
1 tsp vanilla extract
2 1/2 cups powdered sugar
1 tbsp heavy cream
2 tbsp blueberry compote
Steps:
Oatmeal cookies
In a small saucepan, brown the butter. While butter is browning, preheat oven to 350.
Add browned butter to a mixing bowl and allow to cool.
Once butter has cooled, add in both sugars and mix until we'll combined.
Add in the egg and vanilla extract, mix until fully combined.
Add in flour, baking powder, cinnamon, nutmeg, and oats, mix together until incorporated.
Place small, tablespoon sized balls of dough on a parchment lined baking sheet.
Bake for 8-10 minutes or until the edges are golden browned.
Allow to fully cool.
Blueberry compote
Add blueberries and water to a saucepan
Cook on a medium heat until the blueberries have broken down.
Make a slurry with the corn starch and 1 tsp of water.
Add slurry to the blueberries and mix until it thickens.
Add to a bowl and let cool.
Blueberry buttercream
Add butter and vanilla to a mixing bowl and cream together.
Slowly add powdered sugar, heavy cream, and 2 tbsp of the blueberry compote mixture, and mix until incorporated.
Assemble
On the bottom of half of the cookies, pipe the blueberry buttercream around the outside of the cookie, leaving a small hole in the middle.
In the hole, fill with a small dollop of the remaining blueberry compote.
Top with the other half of the cookies to create a sandwich.
