White Chocolate Raspberry Blondies

Ingredients

  • 1/2 C butter

  • 1 C brown sugar, lightly packed

  • 1 tsp vanilla extract

  • 2 eggs

  • 1 tsp baking powder

  • 1 C flour

  • 1/2 C white chocolate chips

  • 1/2 C frozen raspberries, thawed and mostly drained


Steps:


  1. Pre-heat oven to 350.

  2. In a small sauce pan, melt the butter. Once melted, add to a medium sized mixing bowl.

  3. To the bowl with the butter, add the brown sugar and mix until combined.

  4. Once the brown sugar is mixed, add in the eggs and vanilla. Mix until well combined.

  5. Add the flour and baking powder, mixing until just combined. Be careful to not over mix!

  6. Gently fold in white chocolate chips and the mostly drained raspberries, it's okay if there's a little liquid left!

  7. Add mixture to an 9x9 brownie pan and bake for 20-25 minutes, until the edges are golden and a toothpick inserted in the middle comes out clean.

  8. Allow to cool before slicing.
